In fact, a 2019 OnePoll survey, found that 65% of Americans prefer eggs for breakfast. However, the recent Highly Pathogenic Avian Influenza (HPAI), or bird flu, outbreak has killed nearly 40 million laying hens causing low egg supply and skyrocketing prices to skyrocket. Now, that familiar breakfast routine doesn’t feel so reliable. Luckily, there are plenty of tasty and nutritious alternatives to try in place of eggs. Greek yogurt is a great option that pairs perfectly with fruit and granola and just one five ounce serving contains 16 grams of protein. If you’re in a rush, smoothies blended with protein powder can give you a quick and satisfying boost. For those craving something savory, tofu can be cooked up like scrambled eggs and paired with veggies and spices. If you’re looking for a sweet and fiber-rich way to start the day, chia seed pudding is a perfect choice.
